I’m a vegetarian who loves breakfast! So much so, that the previous sentence was begging for an exclamation mark. Breakfast is my favorite meal. I could eat breakfast food three meals a day, and for snacks, and never tire of it. This is made more possible by the fact that there are countless vegetarian breakfast possibilities.

People choose their diets for many reasons – ethical, health, weight loss related, taste preferences. The reason a person chooses their diet shapes the foods they will or will not eat, in addition to personal taste preferences. Just because someone is a vegetarian doesn’t mean they will eat eggs and strawberries. They may think eggs are un-ethical and dislike the taste of strawberries.

Vegetarians are considered to be health conscious, but there is a rising trend in food consumption that expands this conscious eating to include omnivores as well. These days omnivores and vegetarians alike could be equally concerned as to where the food on their plate comes from. Is it organic? Free-range? Grass-fed? Locally produced? GMO-free? These are all great questions to consider when sourcing your breakfast ingredients.

Vegetarian breakfast possibilities, a sampling:

The American un-traditional: eggs, fake bacon, pancakes, hashbrowns

Child’s classic: cereal and milk

Better than oatmeal: oatmeal with butter, milk, and maple syrup topped with dried fruit, fresh fruit, or nuts

My personal favorite: TOAST! Cinnamon raisin toast with butter, rye bread toasted with ghee, fruit bread with chocolate hazelnut butter, bagels with cream cheese, sesame bread with butter, multi-grain bread with jam, nut butter, or marmalade, English muffins, crumpets with honey, French toast

The MUM: cereal, milk, toast, scrambled tofu, baked apples, fruit, yogurt

The Latin: rice, beans, cheese, avocado, fruit, fake meat

The Chinese: rice porridge

The sweet: cinnamon roles, pastries, croissants, donuts

Fresh’n'clean: diced fruits tossed with a yogurt and honey dressing

A VERY important component to my vegetarian breakfast menu, which has yet to be mentioned, is the beverage. Everyone has their preference. My staple is a delicious black tea with milk. My back-up is a refreshing home-made berry smoothie. Let’s be honest, there are some days that just scream to be greeted with a great cup of coffee.

Good Morning! Now, go greet your day with a delicious morning meal, and maybe repeat it for lunch and dinner.

Anna, I’m going to try the fresh ‘n clean. During my recent annual physical my doctor informed me my good cholesterol was too low. He recommended eating more fresh fruits to bring it up. I’ll let you know how it works out in 6 months or so when I have a follow up visit. Thanks!
